Yesterday was a day filled with buying, cleaning, prepping, and cooking vegetables (and some fruit). I made pickled carrots and radishes, chopped up a pineapple, made 3 quarts of delicious asparagus soup, and finished it off by making grilled baby bok choy for dinner. What a marvelous day of eating and cooking, though my feet are sore now. Wish I would have taken photos of the soup making process or the baby bok choy but sometimes it’s hard to remember to grab the camera when i’m fluttering around the kitchen.
How bout that color in those carrot rings!
